  4. 2 teaspoons balsamic vinegar
  5. Salt and pepper to taste

Chicken Chutney Cooking Steps

  1. In a medium bowl, combine the jam, red pepper paste, vinegar, salt and pepper and stir until you have a nice chutney-style marinade. Add the chicken fillet strips and refrigerate for 15 minutes.
  2. Heat a little oil in a skillet over medium heat. Add chicken and chutney, cover and cook for 3 minutes. Then remove the lid and continue cooking until done (five more minutes, eight total).

  4. Tip: I recommend using homemade jam for this as it's usually the queen, but if using store bought jam add 1-2 tsp of water to make the marinade.
