  1. Heat the oil in a skillet over medium heat and sauté the chopped garlic for one minute.
  2. Add salsa verde and watermelon sauce. Then warm up well.
  3. Remove the skillet from the heat and add the sour cream and most of the cilantro, reserving a little for garnish.
  4. Add salt, pepper, or even sour cream if you find the sauce too spicy.
  5. Set aside 2 cups of the sauce to use when adding the enchiladas.
  6. Strain the lemon juice over the chopped chicken.
  7. Add chopped chicken and half the cheese to the main portion of the sauce.
  8. Preheat oven to 350 degrees. Drizzle a 13" x 9" pan with vegetable oil and spread half of the canned sauce (excluding the chicken) in each pan.
  9. Place a portion of the chicken mixture into each tortilla, wrap and place side by side in the skillet. (Before rolling each flatbread, immediately dip it into boiling water to prevent it from breaking.)
  10. You will get 2 full plates, I miss enchiladas too. (about 24 in total)
  11. Pour the enchilada sauce over the enchiladas and top with the cheese. I love Jack's cheese, but use whatever you like best.
  12. Cover a baking sheet with aluminum foil and bake for 15 minutes.
  13. Then, uncovered, bake for another 15 minutes.
  14. Serve with coriander leaves on top.
  15. I cooked rice and Spanish beans to complete this dish.
