  7. If you are frying a pastel, preheat to 225-250 and set the amount of smoke you want. If you use a smoker, charcoal grill or propane grill, be prepared for the usual slow, gentle cooking. Actual temperature should be within this range.
  8. Once fried, place the pork on the top shelf (my choice) and cook until the internal temperature is 140 Fahrenheit.
  9. Check the pork every hour or so, and if your meat feels too dry, treat it with apple juice, apple cider vinegar, or water. I use 50/50 apple and pineapple juice in a spray bottle and it works well.
  10. Remove from oven at 165 C and cover with thick aluminum foil. Place the canned pork in a casserole dish and return to the grill. (Foil helps the meat to dry out and the pan retains the droplets you want later.)
  11. Continue cooking until the internal temperature reaches 204. (This was the magic number for the pig I drew.)
  12. Remove the pork from the oven on a baking sheet. Carefully set aside the pork for a while and pour the cooking juice from the oven into another container. Return the pork to the skillet and refrigerate, cover with a tea towel and rest for 30 minutes - 2 hours.
  13. When the pork is yogurt, gently remove it from the foil. You need to make it into the jar to catch the drops in the foil. Place the pork in a large bowl to tempt it. Be careful, the pork is still very hot!
  14. Start by cutting the pork into large pieces, find the unprocessed fat and discard. Cut the meat into cubes and mix until you get the desired consistency. Be careful not to overdo it here - overcooked pork will rot.
  15. Add the tenderline to the pork and mix more. This is an option, but I think it tastes good and I will keep the pork in the fridge for a few days so that it does not dry out or be used later.
  16. This roast pork makes a great sandwich, tacos, insiladas, nachos and even roast pork for breakfast!
