  3. 3/4 pound boneless, skinless chicken breast, cut crosswise into 1-inch pieces

  5. 3 cloves garlic, chopped
  6. 1 tablespoon chopped fresh ginger
  7. 2/3 cup chicken stock
  8. 1 teaspoon sugar
  9. 3 tablespoons distilled white vinegar (or rice vinegar for a milder taste)
  10. 1/2 teaspoon ground coriander
  11. 1/2 teaspoon salt
  12. 1/4 teaspoon red pepper flakes
  13. 1 1/2 cups halved cherry tomatoes
  14. 1/3 cup chopped fresh mint
  15. 1 1/2 teaspoons cornstarch mixed with 1 tablespoon water.

Steps to cook Thai chicken

  1. Before you start cooking, gather all the ingredients, prepare and measure if necessary.
  2. Remove the seeds from each half of the cucumber with a spoon. Cut into halves, cut diagonally into thick slices and set aside.

Bring to a boil, add mint and cornstarch mixture and cook, stirring constantly, until mixture thickens slightly, about 1 minute.
  6. Divide chicken mixture into 4 bowls and serve. Delicious with jasmine rice.
