- 6 chicken thighs
- 1.5 liters of butter
- 2 tablespoons Sriracha
- For oil

- A little fresh sage
- A little fresh thyme
- 1 small head of garlic

- 2/3 cup cornflour
- 1 teaspoon of flour
- 1 tablespoon of salt
- 2 tablespoons paprika
- 2 tablespoons of onion powder
- 2 tablespoons of garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon white pepper
- 2 teaspoons of pepper
- 4 teaspoons light brown sugar
- Maple syrup for bourbon
- 2 liters of bourbon
- 8 ounces maple syrup
- 3 tablespoons of butter

- 2 cups whole milk
- 2 1/2 cups all-purpose flour
- 1 tablespoon of flour
- 3 tablespoons of sugar
- 1/2 teaspoon of cinnamon
- 2 eggs, white and yellow separately
- 1/2 cup vegetable oil
- 1 teaspoon of vanilla
Erica's Chicken and Bourbon Maple Syrup Waffles
- Mix 1 cup buttermilk and sriracha in a large bowl. Add the chicken and cover the pieces. Cover and refrigerate for at least 4 hours. I like to do this the night before and leave it overnight.
- Mix everything for the well in a large bowl, add salt and pepper and divide into 2 separate bowls. Before grilling, prepare a dry wet dry pan. Leave the remaining half of the butter in a bowl.
- Remove the chicken from the refrigerator and place the pieces in a bowl to drain excess liquid from the melted butter mixture.
- Take each chicken and roll in flour, shake off excess, then beat in fresh butter, shake off excess, then roll in flour in a second bowl. Drain the excess again and set aside.
- The size of the pan you use for frying will determine how much oil you need to use. I use a large spaghetti bowl and pour in a few centimeters of oil, carefully lowering it to fill the bottom half. Mix in the oil mixture and put on high heat, bringing the temperature to 350-360 degrees. Herbs and garlic will flavor when the oil is heated.
- Add the chicken pieces several times. Do not overfill the pot as the temperature will drop. Cook until the chicken is golden brown, about 20 minutes, turning the pieces every few minutes. Transfer the cooked chicken to a wire rack, drain and rest for 10 minutes.
- For the syrup: Combine the bourbon and maple syrup in a small saucepan and place over low heat to reduce the alcohol. This should take about 5 minutes. Remove from heat and stir in oil until everything is mixed. Keep it warm or cool.
- For the waffles: mix the flour, baking powder, sugar, salt and cinnamon in a bowl.
- In a separate bowl, beat the egg whites to peaks.
- In another bowl, combine the egg yolks, vegetable oil, milk and vanilla extract, then stir into the flour mixture.
- Mix the egg whites into the yolk and flour mixture. Once assembled, share them in the waffle of your choice.
