Thai Chicken Ingredients and Seasonings:

  1. 1/4 cup canola oil
  2. 1 large onion, chopped
  3. 2 cloves of garlic finely chopped
  4. 2 tablespoons chopped ginger
  5. 2 tablespoons chopped lemongrass *
  6. 1 cup sweet red bell pepper
  7. 2 cups carrots
  8. 2 cups zucchini, peeled and cut into 3/4-inch (2 cm) pieces.
  9. 6 tablespoons Thai red curry paste
  10. 1 can coconut milk (400 ml)
  11. Can of coconut cream (400ml).
  12. 1 lemon leaf (optional)
  13. 1 tablespoon fish sauce
  14. 1/4 cup fresh lemon juice
  15. 1-1/2 cabbage, chopped
  16. 1/4 cup fresh coriander
  17. 1/4 cup Thai basil (can substitute regular basil) julienne
  18. salt (if needed)
  19. Snack
  20. lemon slice
  21. Served with jasmine rice

  23. 2 pounds boneless chicken thighs, cut into 1 inch or 3 cm (1 kg) pieces.

Thai chicken cooking instructions

  1. First I cooked a pot of jasmine rice in a quick pot and it was ready to serve and I started cooking as soon as I had this dish.
  2. Heat the radishes in a baking dish or in a large 7-quart saucepan and fry the onions until soft. (about 4 minutes)
  3. Add in the chicken and continue to fry until cooked.
  4. Add the garlic, ginger and lemongrass and sauté for one minute.
  5. Add red bell pepper, carrots, and pumpkin and continue cooking for another 2 minutes.
  6. Add the curry paste and stir for one minute.
  7. Pour the coconut milk and cream into a jar and let it mix. Add kefir leaves and fish sauce if desired. Bring to a boil, reduce heat to medium and simmer for 8-10 minutes, or until sauce thickens enough to coat chicken.
  8. Turn off the heat and add the lemon juice, kale, cilantro and fresh basil, adding salt if necessary.
  9. Serve with warm rice and garnish with lemon wedges.

Before you know it, you may find that you have more energy and feel much better than you ever imagined before changing your eating habits.
