- In a bowl, mix flour, cornstarch, a large pinch of salt, and a few black peppercorns. Add the pork and mix until completely coated. Leave to rest for 15 minutes.
- Pour some vegetable oil into a large nonstick skillet and set over high heat. Shake off the excess coating from the pork cubes and sauté until golden and crispy, 6-8 minutes. Place the cubes on a plate lined with absorbent paper and sprinkle lightly with salt.
- Add the onion, garlic, ginger and green onion to the pan. Sauté for 1 minute, then add the peppers and sauté for another 2 minutes.
- Reduce the pan over medium heat. Place rice vinegar, ketchup, soy sauce, chili sauce, and pineapple juice in a pan and bring to a boil. Add pineapple pieces. Make a batter with the remaining cornstarch and a few tablespoons of water. Stir the solution into the sauce and cook until thickened, 1-2 minutes. Arrange the pork on plates and drizzle with the sauce or serve the sauce as a side dish.
