Ingredients and spices needed to prepare Chicken Medira:
- 4 chicken breasts
- 1 bunch of asparagus
- 1 1/2 sticks of butter
- 2 boxes of mushrooms
- 1 yellow onion
- 3 large cloves of garlic
- Fresh parsley
- 1 1/2 cups Madeira
- 1 1/2 cups beef broth
- 1/2 cup whipping cream
- 1 cup mozzarella
Steps to prepare Chicken Madira
- Blanch asparagus. Cut the stringy stalks of asparagus. Pour 6 cups of water into a medium pot, bring to a boil and add 1 tablespoon of salt. Add asparagus and cook until crisp and bright green (2-3 minutes, then remove from boiling water and set aside).
- Place a large, heavy (oven safe) pot over medium/high heat and melt 2 tablespoons butter and 1 tablespoon butter. Add the chopped mushrooms and cook for 5 minutes until soft. Add the chopped onion and cook for 3 minutes. Add minced garlic, then season with 1/4 tsp. Salt, 1/4 tsp. black pepper and 2 tsp. l Careless. Cook for another 2 minutes, then transfer the mixture to a plate and wipe the plate with a damp paper towel.
- Cut the chicken breasts in half lengthwise and sandwich each piece between plastic wrap no more than 1/4 inch thick. Season the chicken with 1/2 tsp. salt and 1/4 tsp. Bulgarian pepper. - In same pot, add 1 1/2 cups Madeira and cook until reduced by half (5 minutes on high), scraping bottom of pot. Add 1 1/2 cups beef stock and cook until 2/3 cup liquid remains, or until about 1/4 of original volume remains (10 minutes). Reduce heat to medium, add 1/2 cup cream, and cook until sauce thickens (2 minutes). Add salt and pepper.
- Return the chicken to the pan and coat with the sauce. Top with mushrooms, asparagus and 1 cup mozzarella. Broil for 3-4 minutes or until cheese melts. Remove from oven and garnish with fresh parsley.
