Frankly speaking, cooking is not the only priority in the life of any man, woman or child on earth. In fact, people have found ways to cook food in their lives. This means that people often rely on packaged foods and mixes rather than making the effort to prepare healthy meals for their family and personal enjoyment.
This means that at any given time, there is usually someone in your cooking class who cooks worse or better than you. Remember that the most productive people have bad cooking days. There are people who cook for many reasons. Some cook as a way of eating and living, while others cook because they enjoy the whole process of cooking. Some people cook when they are emotional, while others cook when they are bored. No matter what you want to cook or learn, you should always start with the basics.
Another good tip when it comes to recipes is to try simple recipes a few times and expand your understanding for more complex recipes. Most recipes have a small indication of the level of difficulty and you can review the recipe to see if it is suitable for what you intended to cook. Remember that Rome wasn't built overnight, and it takes a relatively long time to develop a reliable recipe to work in your cooking cycle.

A few months ago I posted a recipe for Green Seafood Curry. Today is red. To be honest, I prefer red curry to green. I love the extra heat kick. The addition of paprika adds freshness to this version, as does the fruit. As written below, this curry is very bland (even my daughter would eat it). If you want more heat, add more Thai pepper. Also, feel free to play with vegetables. I have carrots and Chinese cabbage in the refrigerator.
Ingredients and spices needed to prepare red fish curry at home:
- 4 cloves of garlic
- 4 (or more) Thai peppers, halved lengthwise and seeded
- 2 tablespoons of medium soup
- 1 piece of ginger slightly larger than a thumb
- 1 small bunch of coriander stalks
- 1 red bell pepper without seeds
- 1 lemon (sand and juice)
- 1 teaspoon whole black pepper
- 1 teaspoon ground coriander
- 1 teaspoon of palm sugar
- 6 heads baby bok choy, chopped
- 2 medium carrots, very thinly sliced
- 3 finely chopped green onions
- 1-400 ml of coconut milk
- 2 tablespoons of fish soup
- 500 grams of hard white fish (I use cod), cut into large cubes
- 1 bunch fresh coriander, coarsely chopped
How to cook red fish curry at home
- Finely chop the first 6 ingredients and place in a food processor. Add the next four ingredients and a good pinch of salt, then mix until slightly softened. Don't worry if you end up with what looks like a smooth sauce instead of a paste; It will be delicious again.
- Add a good amount of vegetable or coconut oil to a large skillet over medium-high heat. Add the Chinese cabbage and cook for 5 minutes until charred. Add the carrots and scallions and continue to cook for 1 minute.
- Add the coconut milk and fish sauce to the pan and add 3 or 4 tablespoons of the curry paste. Boil the mixture.
- Carefully add the fish to the pan. Continue cooking until the fish is done. It shouldn't take more than 10 minutes. Taste the sauce and add curry paste, fish sauce or palm sugar as needed. Sprinkle with coriander and serve with fresh rice. Cover unused curry and refrigerate for up to a week.
While this is far from the end, it is good food for thought. But in all fairness, it will get your creative juices flowing so you can cook delicious family dinners without the dreaded food.
