- In a large bowl, combine the garlic, tamarind, sambal olek, ginger, salt, cumin, fish sauce, and turmeric. Rub mixture evenly over pork and marinate for at least 1 hour and overnight.
- Preheat oven to 400 degrees. Heat the oil in a cast iron skillet over medium heat. Drain and reserve the pork marinade (there will be a tablespoon or two left over), then place the chops in the skillet and cook on one side for 2 to 3 minutes until browned. Use tongs to hold pork chops upright so fat around edges melts, another 2 to 3 minutes. Turn the pork roast right side up and add the reserved marinade to the pan, discarding any pan juices.
- Place pan in oven and bake to desired doneness. About 8 minutes for a slightly pink color inside (135 degrees).
- Place the chops on a plate or cutting board and let them rest for 5 minutes.
