Easiest Way to Prepare Award-winning New Year's Eve Tamales, Pork

- 1/2 teaspoon salt

- 1-1/3 cups sir
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 2 tablespoons baking powder

- Half an onion. In a roasting pan, pour the pork, onion and spices into the water. Bake at 250°F. Bake in the oven for 8 hours. You can cook 8-10 hours less in the Instant Pot.
- Heat up the pan. Take the peppers and fry them for about 3 minutes on each side.
- Add water as needed. After the pork is cooked, leave the broth for 5 cups. If it is not enough, add water to the broth. Let the pork cool down.
- In a bowl, remove stems and add chili and black pepper. Add two cups of boiled broth to the pork. Cook uncovered for 20 minutes. While the pork pieces are cooking.
- Put bell pepper, bell pepper and broth into a blender. Add oregano, cumin, chopped onion, onion powder, garlic and stir until smooth. Strain the sauce as desired. Put in a bowl.
- Heat oil and flour in a skillet. Whisk the flour mixture in a bowl, add the sauce. Fry for about 10 minutes. Mix with pork.
- Place the dried tomatoes in a blender along with the liquid used to make the peppers. Stir until smooth.
- In a large bowl, using an electric blender, add the fat and 2 tablespoons stock until smooth, 3 to 5 minutes. In a separate bowl, whisk together the spice flour, baking powder, salt and cumin. Stir in the fat mixture and mix well with an electric mixer.
- Add the remaining 3 cups of broth to the masala mixture. Mix well and the flour will become smooth and slightly sticky.
- Take a fire and turn it on to evaporate the water in the container so that it does not touch the bottom of the steam chamber, using enough water.
- Dry the cornstarch. Sprinkle the cornflakes with a little tamale flour. Place a tablespoon of pork lengthwise into the center of the tamarind flour.
- Fold each side of the lid over the filling. Fold the bottom of the tamale up. Stack in the steam chamber. Cover the steamer when it is completely solidified. Boil for 45 minutes to an hour.
- Check the tamales after 45 minutes. Take them out when you're done and start until the next batch is ready. Rest for 10 minutes. They will be fixed in a bundle and can be served or frozen for up to 6 months. Hope you like it!!!
