- 1 teaspoon garam masala
- 1/4 teaspoon of tea
- 1 teaspoon of salt
- 1/2 teaspoon of garlic paste
- 1/2 teaspoon of ginger
- Butter Chicken Sauce
- 60 grams raw
- 1 tablespoon of butter
- 1 large onion cut
- 4-5 tablespoons of butter (70-85 grams)
- 6 green cardamoms (whole spice)
- 2 black cardamoms (whole spice)
- 2 bay leaves (whole spice)
- 1 mace leaf (whole spice)
- 1/2 teaspoon ground pepper (whole spice)
- 700 grams of tomato puree
- 1-2 teaspoons Kashmiri chili (spice powder)
- 3 tablespoons coriander seed powder (spice powder)
- 2 tablespoons cumin powder (spice powder)
- 1 teaspoon garam masala (ground spices)
- 1/4 teaspoon of sugar
- 2 tablespoons of kasuri methi
- 1/2 cup cream
- 1/4 cup of coriander leaves
- Exactly water
- Salt to taste
Steps to prepare Butter Chicken / Marjan Makani
- Chicken Marinade: Put all the ingredients in a bowl and mix until the orange and chicken are evenly mixed. Cover and refrigerate for 4 to 24 hours.
- Preparing the chicken: Preheat the oven to 240 degrees Celsius and turn on the cooking function if your oven allows it. Place a wire rack on a large flat baking sheet. Coat the pan with cooking spray and place the chicken on the grill. Try to leave some space between each piece of chicken because we want to rub the outside of each part. You need to do this in two parts.
- Preparing the chicken: Place it on the stove and cook for 10 minutes, turn the chicken and cook for another 5 minutes. Depending on the oven, the time may vary slightly. The surface of the chicken should be slightly charred but not completely cooked.
- Butter Chicken Sauce: If you have a small spice grinder, grind the cashews into a fine powder. Add half a cup of water to make condensed milk. If not, put half a cup of water and pure "raw milk" in your regular mix. This can be left for now.
- Heat in a box or a large pot (at least 3 liters). Add the onion and saute until translucent. The onion should not brown or burn. Allow your blender to cool enough (fine blenders can be hot) and add 1/2 cup of water to make a smooth paste. This can be left for now.
- In the same pan, heat 3 tablespoons of butter and add the spices and fry for about 1 minute. Don't burn them!
- Now add the onion paste and tomato puree and cook for 5 minutes, stirring every now and then to control the split. If necessary, you can add a little water.
- Add our "Cashew Milk" and pour it through a fine sieve. Press down with a flat spatula to get enough of the mixture so that no lumps come out. Add spice powder, sugar, half a cup of water and stir. You may need to add more water. Do not make the soup too liquid, it should have a smooth consistency. Cook until the soup starts to boil. Reduce the temperature to a simmer.
- Add cream and mix. Add crushed methi fraction between thumb and palm and mix well.
- Add fried chicken pieces and stir. Add 2 tablespoons of butter (to taste). Add salt to taste. Cook for at least 10 minutes to make sure the chicken is done. Again, if the soup is too thick, you can add water.
- Avoid all spices as much as possible. It doesn't matter if something is left on the board. Biting may be uncomfortable for some, but it's not bad for you.
- It is served with rice and coriander leaves. Enjoy!
