This is a very simple fried rice recipe that I got from Just One Cookbook. It's quick, easy and quite fun. Mrs. Worm doesn't think green onions are as bad as regular onions, so they do. It really needs to be done with a wok, but I don't have one that will work on my induction center, so I tinkered with the pan. I also used bacon grease instead of cooking oil which gave it more flavor.
The ingredients and spices needed to cook Ham Fried Rice (ハムチャハ):
- 2 cups of rice remaining
- 2 pieces of ham, cut into cubes
- 1 egg, lightly beaten
- Cut 2 stems of green onions, divide them into white and green parts
- Salt and white pepper to taste
- 2 tablespoons bacon fat or vegetable oil
Steam for cooking ham fried rice (チャハ)
- Heat 1 bacon fat/oil in a skillet or fry over medium heat. Reduce heat to medium and fry eggs until fully cooked, about a minute. Lay off.
- Add another tablespoon of oil/fat. Fry the ham and the white pieces of green onion over medium heat for one minute.
- Add the rice, husking it to break up the entire portion. Season with salt and white pepper.
- Add the eggs, mix well. Add the soy sauce and continue beating the rice until well blended.
