Ingredients and Seasonings for Thai Chicken Curry:

  1. 2 cans of coconut milk
  2. 2/3 pack of Maeploy yellow curry
  3. 1 bag palm sugar (less than 1/3 cup golden brown sugar)
  4. 1 red bell pepper
  5. 1 orange bell pepper
  6. 1 yellow sweet pepper
  7. 2 medium onions
  8. 4 carrots
  9. 4-5 chicken breasts or 8-10 boneless chicken thighs
  10. 4 tablespoons of fish soup
  11. 2 tablespoons of salt
  12. 2 tablespoons of freshly ground black pepper
  13. 3 tablespoons of oil
  14. 4 medium yellow potatoes
  15. 2 bay leaves
  16. 1 teaspoon of lemon juice

Stages of preparation of Thai chicken curry

  1. Cut the chicken fillet into cubes of 1.5 cm.
  2. Remove the seeds and cut the pepper into pieces.
  3. Cut the onion into cubes of 1.5 cm.
  4. Peel the carrots and cut them at a small angle into half-centimeter coins.
  5. Peel the potatoes and cut them into 1-inch cubes. (White potatoes can be substituted, but yellow potatoes keep longer.)
  6. Add half of the vegetable oil, onion and carrot over medium heat. Sauté the onion until it begins to caramelize. Remove from oven and set aside.
  7. Add the ground chicken, salt and pepper. Fry the chicken until it begins to brown.
  8. Add the remaining vegetable oil, curry paste, and half (2 tablespoons) of the fish sauce. Heat until the paste starts to turn into a paste. Add 1 cup coconut milk and 2 green leaves.
  9. Cook for 5 minutes, add potatoes, onions and carrots, reserve in advance. Add the palm sugar disc, cook for 10 minutes, stirring occasionally to prevent the disc from burning.
  10. Add paprika, second can of coconut milk, remaining fish sauce (2 tablespoons) and 1 teaspoon lemon juice. Cook over low heat for 10-15 minutes or until the pepper is soft.
  11. Serve with any delicious rice. I prefer basmati rice, but any rice can be used. Rice is not instant!!!
