Ingredients and Spices for Fried Eggplant with Chicken (Modified Spicy Fried Eggplant Recipe by PF Chang):
- 2 tablespoons of sesame oil (canola oil is not used in this recipe because it is not fried)
- 1 tablespoon of garlic (about 6 large cloves)
- 2 tablespoons of minced ginger
- 1 tablespoon of sesame
- Mix 1 tablespoon of corn flour with 2 tablespoons of water
- 2 tablespoons of oyster sauce
- 2 tablespoons of soy sauce
- 1 tablespoon of fish sauce (not vinegar)
- 2 tablespoons of date syrup (instead of sugar and to add the black color as this recipe doesn't use peanut sauce)
- water 2 tbsp
- Cut the chicken breasts into cubes and fry them separately in the oven with 1 tablespoon of canola oil, salt and pepper.
- Cut the skin of the egg to taste
- Cut the carrot into pieces
- Green onion
- Boiled white rice
- Chili flakes (no packets of chilli or hot sauce for the kids, but you can add them if you want)
- Water to boil eggs and carrots (the steam is used to avoid using too much oil in recipes and to reduce the time for frying eggs and carrots in oil)
How to Make Chicken Fried Egg (PF Chang's Spiced Fried Egg Variation)
- Steam eggs and carrots separately
- In a large pot or wok, add 2 tablespoons of sesame oil, garlic, ginger, and sesame seeds. Oh the smell !!
- First, boil the boiled carrot for 1 minute, then add the boiled eggplant and pour a little sesame oil over it. Whisk gently for about 5 minutes. Note that steaming at this stage will significantly reduce the cooking time of the vegetables. Basically, we have layered the flavor. You can change the steam time and cook a little but fry in the oil longer or do the opposite like I did. I chose the latter to give it a healthy touch.
- Now add the chicken cubes from step 3.
- Prepare the sauce by mixing the cornstarch with the water and adding the soy sauce, oyster sauce, fish sauce, chili flakes and date syrup. If you want to use more water, you can add as much or as little water as you like.
- Pour the sauce prepared in step 5 in step 4 and wait for it to reduce
- Cut into wedges to garnish and serve with white rice. Proper nutrition!
