  6. 3 cloves garlic, finely chopped
  7. 1 small slice of pink ginger, chopped
  8. 1 large shallot, finely chopped
  9. 1 bird pepper pitted and finely chopped
  10. 2 glasses of unsweetened pure pineapple juice
  11. 1 tablespoon coconut sugar
  12. 1 handful of chopped fresh mint

Stages of cooking chicken with pineapple sauce

  1. In a large bowl, mix the fish sauce, 2 tablespoons of soy sauce and lemon juice. Add a little fresh black pepper and chicken thighs. Cover and refrigerate for 30 minutes.
  2. Place the pineapple slices on a plate lined with kitchen paper. Store the juice from the jars.
  3. Put a large non-stick pan on medium and high heat. Shake the marinade from the chicken thighs and place in a pan skin side down. Let them fry lightly for 20 minutes until the skin turns golden brown. Turn the chicken over and fry on the other side for 10 minutes. Lift the chicken on a plate.
  4. Put the pineapple rings in the pan. Let them fry for 3 to 4 minutes, then turn slightly. Fry for another 3-4 minutes, then remove from the pan.
  5. Add a little vegetable oil to the pan and increase the heat to medium and high. Once heated, add the garlic, ginger, shallots and chili peppers. Fry for a minute, then add the pineapple juice (including the juice from the jars). Add the remaining tablespoon of soy sauce and palm sugar. Put the chicken thighs in the sauce, peel. Simmer for 15 minutes or until the sauce is reduced by two-thirds. Serve with pineapple slices over rice and sprinkle with mint.
