- Place the chicken in a large pot and cover with water to cover the chicken. Add 1 celery stalk (large) and 1 carrot stalk (large) and the rest of the ingredients except the noodles. Bring to a boil, then reduce heat. Cover and check after one hour and 15 minutes.
- Insert the thermometer deep into the chest until the core temperature is 160.
- At this point, once your chicken is heated through, remove the chicken and place on a large cutting board. Strain and save your delicious soup. The photo below shows the chicken after it has been shredded and before drying. She added the bones to the broth and stewed for another 30 minutes.
